Gingerbread

Simple gingerbread recipe
If there’s one thing you need to bake at Christmas, it’s gingerbread. Admittedly this was my first time giving it a go but it turned out pretty well if I do say so myself, the only thing is the biscuits don’t really hold a good shape so my Christmas trees don’t quite look like I imagined them to!

Ingredients (makes around 15-20 biscuits)
230g plain flour
100g soft brown sugar
110g golden syrup
1tsp bicarbonate of soda
2 heaped tsp ginger
1/2 teaspoon cinnamon
90g butter
Method
1. Pre-heat the oven to 180 degrees (gas mark 5) and line two large trays with greaseproof paper
2. Add the flour, sugar, bicarbonate of soda, ginger and cinnamon to a bowl
3. Add the butter to the dry ingredients and rub in with your fingers
4. Add the golden syrup and mix in
5. Bring the mix together into a dough with your hands
6. Roll out the dough on a lightly floured surface and cut into desired shapes with a cookie cutter
7. Lay out onto the baking trees and leave some room for them to expand
8. Cook for around 10 minutes for soft, chewy biscuits or around 15 minutes for firmer biscuits.
I cooked mine for 10 minutes as I prefer chewy gingerbread and they turned out brilliantly, this is such an easy and quick recipe to whip up even during the busiest of festivities!
