Chocolate Mousse

Hi!
Today I have a recipe for chocolate mousse to share with you that only has four ingredients and doesn’t use eggs. It’s from Lorraine Pascal’s Baking Made Easy book (which by the way is pretty good!) but I changed a couple of the measurements to suite my tastes as I’m not a huge fan of dark chocolate.
I have to warn you though this is very bad, very sickly but oh so good!
I used small wine glasses for my mousses as they were the only decent things I had but I’d recommend using something a lot smaller as this mousse is very rich so you don’t need a massive portion. They’re ridiculously easy to make and can be quickly whipped up in the morning and stored in the fridge until night. 
Chocolate Mousse Recipe
Ingredients (serves 2)

200ml whipping cream
1 drop of vanilla extract
100g milk chocolate
40g dark chocolate (if you prefer a darker chocolate taste use 50g milk and 50g dark chocolate instead)
Method
1. Whip the cream and vanilla extract together until it just begins to thicken.
2. Melt all the chocolate together and pour it into the cream and stir it slowly to combine it all.
3. Whisk the mixture for 2-3 minutes until it has thickened, I found at this point it didn’t thicken at all really due to the warm chocolate but don’t worry the mousses still turn out fine!
4. Spoon the mixture into glasses and put in the fridge (for at least 30 minutes) to set.
5. When your ready to serve, grate some chocolate over the mousse and then tuck in and enjoy!
