Quick and easy shepherd’s pie recipe | AD

Shepherd’s pie is up there with one of my all time favourite hearty recipes to make at this time of year. It’s quick, simple and filling and will as being a great option for a bit of comfort food. So today I’m sharing with you how to make one of my go to dishes in autumn/winter.

Anything that can be thrown in one pan and left to do it’s thing is a winner with me so when I was sent a sachet of the Shepherd’s Pie Mix by Schwartz I knew I’d be saving it to rustle up on a cold, miserable weekend which just calls for this sort of dish.

Ingredients

A traditional shepherd’s pie uses lamb mince and onion but I don’t really like lamb and Josh doesn’t like onion so I just stuck to what I usually do and added plenty of vegetables like usual. I think shepherd pie is an easy recipe to play about with and adapt to your own tastes so here’s what I used.
500g lean beef mince
Carrots, peas and sweetcorn
200ml cold water
Schwartz shepherd’s pie mix
Potatoes for mash

Method

This really couldn’t be easier especially as I used frozen vegetables too.
1. Brown off the mince in a pan then drain off any excess juices
2. Add the shepherd’s pie mix to 200ml of water and stir before adding it to the mince
3. Add your selected vegetables to the pan and stir everything
4. Leave it to simmer for 5-10 minutes before transferring the mince and vegetables to an oven proof dish
5. Mash the potatoes and add them on top of the mince
6. Put the dish in the oven and leave everything to cook for 20 minutes until the mash has browned and everything is bubbling

We both really loved this shepherd’s pie. I’m not going to lie I was a little dubious as I’ve been making this dish for years and I’ve never tried the Schwartz mix but it was absolutely delicious. For only 85p from Tesco you really can’t go wrong and I’d highly recommend giving it a try. As there’s only two of us, there was enough mince and veg to put away and freeze too meaning we can have this dish again another time!
